Note

Butter Puff Pastry is one of the most misunderstood pastries that chefs endeavour to undertake and fail to achieve a good result with due to the butter aspect, as it requires proper temperature control of both the dough and the butter alike.
So the following discussion will be brief, as it will depend on such things as the time of year, hot or cold weather, the temperature of your kitchen and how fast you press the rollers down on the sheeter being used or whether you're using a rolling pin on a bench. All these play a large role in the end result of how flaky puff pastry will turn out.

FAQ's

Expand All:

How cold does the dough have to be when mixing it?

Again that depends on whether it's hot or cold but in general, if the temperature is over 25 degrees Celsius, you would then start looking at using refrigerated water.

Can I use the butter I am folding in at room temperature?

That all depends on where you are located and what time of the year it is, thus whether it's hot or cold. As stated both need to be at the same temperature but as a rule anything above 5 to 8 degrees doesn't result in a good workable pastry.
